how it works

From your inbox to your table.

01

By Sunday

You order, 30 seconds. Sunday night we close the list and Lorraine plans the week around it — we bake to order, so there is nothing sitting on a shelf.

02

The day before

The dough starts. It ferments through the night and most of the next day. The starter Lagom does the slow work no shortcut can fake.

03

Wednesday to Saturday

Three loaves at your door, hours out of the oven. Try them, then tell us what landed and what did not.

honest ingredients, nothing hidden

Flour. Water. Salt. Time.

Everything real bread needs. Everything industrial bread skips.

Flour

Stone-ground, local

Water

Filtered

Salt

Sea, never iodised

Time

Long and slow

No commercial yeast. No preservatives. No dough conditioners. The long ferment is not a flourish — it is the part that works through the grain before you do, breaking down what makes ordinary bread sit heavy. We put digestion first and let the taste follow. We won’t promise you how it will feel; eat it for a week and let your gut answer.

why this matters

The supermarket loaf vs. the real thing.

Typical supermarket loaf

  • ✕Often a long list of additives and dough conditioners
  • ✕Mixed and baked in a few hours
  • ✕Refined flour, quick to digest
  • ✕Little fibre, little character
  • ✕Commodity flour shipped from afar
  • ✕Added sugars and preservatives

Lagomberry

  • ✓Ingredients you can read out loud: flour, water, salt
  • ✓Naturally fermented, long and slow
  • ✓Whole grain, slow fermentation
  • ✓Naturally fermented, many find it easier to enjoy
  • ✓Locally milled, stone-ground grain
  • ✓Sugar only where a recipe needs it, never preservatives
Lorraine, the baker behind Lagomberry
the baker

I’m Lorraine. I bake.

I’ve fed my starter Lagom every morning since 2023. “Lagom” is Swedish for just the right amount. Not more, not less. That is the whole philosophy.

Industrial bakeries add enzymes to rush, emulsifiers to stretch shelf life, sugar to mask the flavour they lost in the hurry. We don’t. The dough rests overnight and by morning it just smells like bread.

The Trial Pack is an invitation. If you don’t love it, tell me what was off and we give you your money back — that is the deal, and I mean it. If you do love it, you’ll understand why we bother.

We don't make promises.
Just taste for yourself.
