Avocado & Spinach Toast

Smashed avocado, just-wilted spinach and a bright lemon hit on thick whole wheat. Five minutes to the breakfast everyone photographs.

What you need

  • 1 thick slice Whole Wheat Sourdough
  • 1 ripe avocado
  • 1 big handful baby spinach
  • ½ lemon
  • 1 tsp olive oil
  • Chili flakes
  • Flaky salt
  • Optional: cherry tomatoes, a poached egg

Make it

  1. Toast the whole wheat until the edges crisp.
  2. Wilt the spinach in a hot pan with a little olive oil, about 30 seconds.
  3. Mash the avocado with lemon, salt and a little olive oil.
  4. Spread the avocado to the edges, then pile the spinach on top.
  5. Scatter with chili flakes, flaky salt and halved tomatoes.
  6. Add a poached egg if you want a full meal.

Tip. Rub the warm toast with a cut garlic clove before the avocado goes on, for a quiet savoury depth.
