Cinnamon-Raisin French Toast

Thick slices of cinnamon-raisin sourdough soaked in vanilla custard and griddled golden. The raisins caramelise at the edges — the best breakfast there is.

What you need

  • 1 thick slice Cinnamon Raisin Sourdough
  • 1 ripe avocado
  • 1 big handful baby spinach
  • ½ lemon
  • 1 tsp olive oil
  • Chili flakes
  • Flaky salt
  • Optional: cherry tomatoes, a poached egg

Make it

  1. Whisk the eggs, milk, vanilla and cinnamon in a wide bowl.
  2. Soak each slice 20–30 seconds per side.
  3. Melt a little butter in a pan over medium heat.
  4. Griddle 2–3 minutes per side until golden and set.
  5. Serve warm with maple syrup, berries and a dusting of sugar.

Tip. Slightly stale slices soak up more custard without going soggy.
