Start with the rye.
If you only try one thing from us, make it a rye. Naked Rye is all rye: rye flour, a rye starter, water, salt and sprouted rye berries baked in whole, a small, dense 300 g loaf you slice thin. The European Rye is the everyday one, darker and a little tangy. Then the wheat loaves, for sandwiches and toast.

Naked Rye
Sourdough
All rye, with sprouted rye berries baked in whole. Dense on purpose: slice it thin.

Dark, deep and a little tangy. Rye and wheat flours, a touch of molasses.

Crackly crust, open crumb. Flour, water, salt and starter, nothing else.
Sweets, baked to order:
How a Beacon order runs.
Order by Sunday night
We close the list, and Lorraine plans the week’s bake around it. Your loaves are baked for your order.
The dough starts
Mixed with our starter, Lagom, and left to ferment slowly for the wheat and rye loaves.
Bread in hand
On the day you chose: delivered in Beacon, or waiting on the stand in New Windsor.
One baker, one starter.
Lorraine shapes and bakes every loaf in our kitchen in New Windsor. She has kept the same starter going since 2023 and plans each bake day around the orders that come in by Sunday.
No commercial yeast and no preservatives in any of our loaves. The Whole Wheat is flour, water, salt and starter; every loaf’s full ingredient list is on its page.

From people who tried it.

“I missed bread from my country. I’m so happy I found this place. Tastes like real bread has to taste. Will order consistently.”
Whole Wheat, Cinnamon Raisin and European Rye: $26 instead of $38. New customers only, one per household. Delivery to Beacon is $5.

How long does a loaf keep?
There are no preservatives, so enjoy it within 4 to 5 days, or slice and freeze it for longer. Our bread care guide has the details.
