Avocado & Chili Rye

The morning standard, made better by real rye. Creamy avocado, bright lemon and a kick of chili on a slice that actually has structure under it.

What you need

  • 1 thick slice European Rye
  • 1 ripe avocado
  • ½ lemon
  • Chili flakes
  • Extra-virgin olive oil
  • Flaky salt
  • Optional: a poached egg

Make it

  1. Toast the rye until the edges crisp.
  2. Mash the avocado with lemon, salt and a little olive oil.
  3. Pile it onto the toast and spread to the edges.
  4. Scatter with chili flakes and a little more salt.
  5. Top with a poached egg if you want a full meal.

Tip. A few thin radish slices or some quick-pickled onion lift this from good to genuinely great.
